AOP CREMANT DE LIMOUX

22 km south of Limoux, the family estate of Nicolas and Amandine Therez stretches its vineyards across the hills of Serres, at an altitude of 330 to 500 meters — the highest elevation in the appellation — at the foothills of the Pyrenees. Bordered by Mount Cardo (795 m), the village takes its name from this “elongated mountain” that shelters it. The cooler, more humid terroir, with its late spring and fresh autumn, favors vibrancy and elegance. The winery has been restored on the banks of the Rialsesse River, near the medieval bridge of Serres. The 35-hectare vineyard lies within a protected area (Natura 2000), and half of the commune’s land is covered in forest. Nicolas and Amandine work together in the cellar, where their shared understanding is reflected in the creation of fine, delicate bubbles, rich aromatics, and a velvety mouthfeel.
